杯子蛋糕
用了Jesslyn 的不回缩杯子蛋糕食谱,但我烤箱小所以减量
(A)
40g玉米油(32g)
5粒蛋黄(4粒)
30g幼糖(24g)
100ml牛奶(80g)
100g低粉(80g)
(B)
5粒蛋白(4粒)
40g糖(32g)
1.牛奶+幼糖+玉米油(加热而已不用煮沸)
2.筛入低粉,搅拌均匀
3. 蛋黄分次加入,搅拌
4.蛋白九加入塔塔粉,分三次加入糖,高速搅拌至8-9分发(小勾)
5. 蛋白糊+蛋黄糊,拌匀
6.倒入纸杯8分满
7. 160度,25分钟
只把其中三粒挤进卡士达酱奶油,因为淡奶油打得不大好。
