鸡蛋糕
买了五粒蛋想做戚风蛋糕,但打了三粒,没一粒分的好,只好换做全蛋蛋糕咯。
材料:
低筋面粉 230g
鸡蛋 3粒
糖 170g
100plus 75g
将鸡蛋打到起泡,加入糖打,直到变乳白色,100号和面粉分3次筛入拌匀,倒入8"模具,在面糊上用糖撒十字,大火蒸40min。
*表面上看颜色不是很均匀

午餐肉
第二次做,还是不成功,太松了,一切就碎。
650g 五花肉
蛋清 一个
粟粉(玉米淀粉) 4汤匙
低粉 3汤匙
清水 1汤匙
材料 (A)
生抽 1汤匙
姜汁 1汤匙
麻油 2茶匙
盐 半茶匙
糖 1茶匙
胡椒粉 适量
红椈粉 1茶匙(没放)
五香粉 1茶匙(没放)
肉加入材料(A),之后加入一半的蛋白和一半的粉类,之后再加蛋白再加粉,再加入水,顺方向搅拌直到起劲(大概一分钟),
装入刷了油的玻璃盒,表面以锡纸盖好,放入蒸锅,蒸35-40 min
